Healthy Turkey Taco Salad


who says eating healthy has to be boring?


1 - brown ground turkey breast till no longer pink

2 - add 1 packet of taco seasoning mix to browned meat w/required water, and simmer according to package directions (follow package directions as amounts of water to add will vary by brand of seasoning packet)

3 - while waiting on step 2, in a large bowl layer Spring mix, Spinach, sliced cherry tomatoes, and fat free cheese.

4 - at this point you can top your 'salad' mixture with the ground turkey mixture, or you can portion out the salad mixture on individual plates and top the ground turkey mixture onto individual portions.

5 - take approx 1 oz baked (or if you can find them light) nacho cheese doritos, crushed, and sprinkle over the top of the salad.

1/6 of the recipe (w/o salsa, sour cream, peppers) = approx 235 calories,
43%Carbs, 41% Protien, 16% Fat

** while NOT included in the nutritional stats, you can add black olives, hot peppers, onions, salsa, sour cream, or just about any ingredient you enjoy on a taco, just remember if you chose to add those ingredients YOUR nutritional stats will be slightly different **

** depending on how big of portions you like this could feed 4-8 people, we got 6 nice size servings out of it and BONUS - plenty of veggies**
 
** be SURE to get LEAN GROUND TURKEY BREAST - just ground turkey includes dark meat and skin and is usually as fatty as ground beef**
 
** in my picture is Fat Free Sour Cream, about 1tblspn, about 1 tbsp of salsa, and some banana peppers**
